Handing someone a glass of tap water whilst everyone else has something interesting is a small failure of hospitality. It is also entirely avoidable with an hour of preparation and no special ingredients. The aim is a drink that looks and feels like it was meant for an adult, not an apology.

Bitterness is what is usually missing

Soft drinks are sweet and sour but rarely bitter, which is why they feel childish next to anything else. Strong cold tea, tonic water, grapefruit, or a splash of chicory coffee add the missing edge. A drink with three flavour directions instead of two reads as grown-up almost immediately.

Build a base you can make in advance

Cold-brewed hibiscus, a ginger and lemon syrup, or a strong rosemary infusion will keep in the fridge for a few days and become four different drinks. Make one base, not five finished drinks, and top up with sparkling water to order. A sealed carafe or jar from a range such as NETANY keeps the base out of contact with fridge smells and pours cleanly at the table.

The glass carries most of the impression

The same drink in a proper tumbler and in a plastic cup is not the same event. Serve in whatever your best glassware is, with the same ice and the same garnish as everyone else gets. This costs nothing and does more than any recipe.

Ice, garnish and timing

Use large cubes so nothing turns to water halfway through a conversation, and add citrus at the moment of serving rather than letting it sit. Herbs should be slapped once between the palms to release oil, not muddled into shreds. A drink that keeps its appearance for twenty minutes is worth more than one that peaks in the first sip.

Five bases that earn their fridge space

• Ginger, lemon and a little sugar, simmered then cooled, diluted with soda.
• Cold-brewed hibiscus, sharp and dark, good with orange peel.
• Strong cold black tea with cardamom, over ice with a splash of apple juice.
• Cucumber and mint water, made overnight and strained before guests arrive.
• Simple syrup on its own, so anyone can sweeten their own glass to taste.

Do not announce it

Nobody wants a running commentary about how their drink contains no alcohol. Put the jug on the table with everything else and let people pour. If someone asks, answer briefly and move on.

Keeping it safe and fresh

Anything made from fresh fruit, herbs or tea is perishable, so keep it in the fridge in a sealed jar and use it within two or three days. Do not leave a jug standing in the sun on a garden table all afternoon and then put it back. Wash the silicone seal from the lid separately and dry it, because that is where trouble grows first.

What not to bother with

Bottled alcohol-free spirits are expensive and frequently taste of very little on their own. If you enjoy one, use it, but do not buy three bottles to be a good host. A jug of something homemade and cold, in a decent glass, outperforms almost all of them at a fraction of the cost.
